If you’re looking for a cool, creamy summer treat, chocolate or matcha nice cream is your go-to! Made with just one ingredient – ripe or overripe bananas – this frozen plant-based dessert is easy to make right at home.
Here’s all you need to do:
1. Slice ripe bananas and freeze overnight. Arrange them in a container or spread them out on a parchment-paper-lined sheet pan and cover them with cling wrap.
2. Toss the bananas into a food processor or high-speed blender and pulse several times until small chunks form. Don’t forget to scrape down the sides of the food processor as needed!
3. Feel free to add flavor combos for extra deliciousness.
4. Blend for 1-2 minutes until the texture is creamy and smooth, like custard. Don’t over-blend – if it liquefies, freeze overnight before serving.
5. Enjoy as a soft-serve “nice” cream. Or, freeze in an airtight container for a few hours until firm. Delicious!

Specialty Ingredients
Top-quality matcha sourced from Japan is essential for the best flavor. Avoid mixes that tend to contain unnecessary artificial flavors. If you’re not ready to commit to a whole tin, try the individual packets from Trader Joe’s. For an extra-refreshing twist, add a minty kick!

Your imagination only limits the flavor pairings for nice cream. And don’t forget about the toppings. Some of my favorites are coconut whipped cream, chopped nuts, and toasted shredded coconut.
