3-Ingredient Potato Flatbread
Ingredients
- 3 russet potatoes peeled
- 1 teaspoon fine sea salt
- 2 cups all-purpose flour see notes
- ½ teaspoon cumin optional
- 1 clove garlic peeled (optional)
- ½ teaspoon coriander seed optional
- 1 teaspoon black pepper optional
Instructions
- Simmer the potato: Peel the potatoes and simmer in salted water until fork tender (about 15-20 minutes). Optionally, add the cumin, garlic, and coriander to the water while simmering the potatoes.
- Drain and mash the potatoes or press through a food mill into a large bowl.
- Blend with flour: Measure out your flour into a medium bowl. If using black pepper, stir it into the flour to evenly distribute it.
- Add half the flour to the mash potatoes and knead with your hands in the bowl. Continue adding flour until you have a spongy ball of dough.
- Roll the dough: Divide the dough into six equal portions. Form each piece into a ball using your hands.
- Place each ball onto a lightly floured surface and press down with the palm of your hand to create a thick disk.
- Place a piece of parchment paper on top of the dough. Use a rolling pin to roll from the center out into an 8” circle. Flip and rotate the dough frequently to create an even thickness.
- Cook the flatbreads: Heat a nonstick or cast-iron pan over medium-high heat. Add one disk of dough on the pan and cook approximately 1-2 minutes each side. You will know when it is ready to flip when the flatbread starts to lightly brown and bubble.
- Place the cooked flatbread onto parchment to cool and repeat with remaining dough balls.
